Step 1
Add oil first

Add watermelon, mint, cilantro, mint, onion, lemongrass, chili, and tom yum paste.

Add white wine and reduce by 1⁄2

Add chicken stock and cook for 20 minutes

Add fish sauce and lime to taste

Add 1⁄2 tsp of oil on pan, increase heat to medium high

Season scallop or salmon with salt & pepper

Skewer olive, cooked seafood, pearl onion, and baby tomatoes
