Watermelon Seafood Martini Soup Recipe by Chef Jack Lee

Ingredients

Instructions

  1. Step 1

    Add oil first

  2. Step 2

    Add watermelon, mint, cilantro, mint, onion, lemongrass, chili, and tom yum paste.

  3. Step 3

    Add white wine and reduce by 1⁄2

  4. Step 4

    Add chicken stock and cook for 20 minutes

  5. Step 5

    Add fish sauce and lime to taste

  6. Step 6

    Add 1⁄2 tsp of oil on pan, increase heat to medium high

  7. Step 7

    Season scallop or salmon with salt & pepper

  8. Step 8

    Skewer olive, cooked seafood, pearl onion, and baby tomatoes

  9. Step 9

    Serving

Note

Be sure to strain the soup before serving
