Ingredients
  • 2 cloves garlic (minced)
  • 1 red onion (small, minced)
  • 1 lemongrass (stalk, inner leaves only, minced)
  • 1 teaspoon ginger (fresh, peeled and minced)
  • 2 jalapeno peppers (split, seeds removed)
  • 1 teaspoon cilantro (chopped)
  • 1 cup fish sauce
  • 2 teaspoons sugar
  • 1 lime (juice)
  • 2 chicken breasts (boneless, skinless)
Instructions
  1. Step 1: Marinade

In a saucepan, combine the fish sauce, sugar, lime, cilantro, garlic, onion, lemongrass, ginger, peppers, and so on.
Over medium heat, slowly bring to a boil, then turn off the heat and let cool.

  2. Step 2

Make 1-inch cubes out of the chicken breasts, then toss the chicken in the marinade and leave it for a minimum of two hours.

  3. Step 3

Soak wooden skewers in cold water for 30 minutes.

  4. Step 4

Chicken cubes should be skewered and grilled for 3 to 4 minutes on each side, or until firm and faintly browned.

Note

You can serve this dish with a side of peanut dipping sauce after cooking them to perfection on the grill, in the oven, or in the air fryer. These kabobs are so good that they might end up being your new go-to summer skewer dish.
