Step 1
In a pot with oil, cook aromatics over medium heat until they are browned (2 min)

Convert to a syrup consistency by reducing sugar, fish sauce, and soy (3-5 min)

Add water and bring it to simmer

Add the fish steaks, and simmer for about 20 minutes.

- Catfish, salmon, swordfish, or scallops are the fish that this dish works best with.
