Ingredients
  • 8 ounces shredded poached chicken (with sliced skin)
  • 1/4 cup red onion (paper-thin slices)
  • 4 red Thai chiles (thinly sliced)
  • 3 tablespoons fish sauce
  • 2 tablespoons granulated sugar
  • 1/4 cup lime juice
  • 1/4 cup scallions (sliced)
  • 1/4 cup mint leaves (torn)
  • 1/4 cup cilantro (roughly chopped)
  • 1/4 cup laksa leaves ((Vietnamese coriander))
Instructions
  1. Combine the chicken, red onion, chilies, and seasonings (fish sauce, sugar, and lime juice) in a small mixing bowl. Use a spoon or, even better, your hands to gently combine

  2. Stir in the laksa leaves, mint, cilantro, and scallions

  3. Add fried shallots after transferring to a serving platter. Ganish with slices of cucumber and lettuce leaves
