Ingredients
  • 800 grams beef rib (or tenderloin)
  • 50 grams yuzu hollandaise
  • 6 grams sea salt
  • 50 milliliters grapeseed oil
  • 1 yuzu shiso condiment (1 serving)
  • For the yuzu hollandaise
  • 10 grams onion (sliced)
  • 2 grams garlic
  • 20 milliliters yuzu juice
  • 30 milliliters water
  • 20 grams egg yolk
  • 180 grams butter (melted)
  • 2 grams sea salt
  • 2 grams sugar
Instructions
    Make the beef
  1. Season beef with sea salt and sear with oil and hot pan.

  2. Roast in oven at 160 degrees until medium-rare.

  3. Slice and serve with yuzu hollandaise and yuzu shiso condiment

  4. Make the yuzu hollandaise
  5. Cut the yuzu juice, water, onion, and garlic in half.

  6. Strain and stir in the yolk, sugar, and sea salt.

  7. Return to heat, then whisk until a ribbon stage is reached.

  8. Slowly stir in the butter
