Flat Iron Steaks Recipe by Master Chef Pam

  1. The Oyster Blade steak should be at room temperature. 30 minutes prior to cooking, remove your oyster blade from the refrigerator

  2. Add any desired seasoning to your steaks. For classic oyster blade, season with a lot of coarse salt, freshly ground pepper, and olive oil 

  3. Heat a pan or a barbecue. Grill an oyster blade steak for two and a half minutes on each side, then add thyme for a delicate flavor and aroma. After that, give your steaks a four-minute rest before dishing. However, if you prefer your Oyster Blade steak medium-well, cook it for 3 1/2 minutes on each side and let it rest for 5 minutes. After grilling, resting steak is crucial. If you cut into the meat right away after cooking, the tasty cooking juices will end up on your plate rather than in your steak since the heat of the cooking draws the juices in the flesh toward the surface. Garnish with roasted garlic and serving
