The crab meat should be removed from the shell. Make sure the flesh is free of shattered shells. Combine it with chives, lime zest, fresh lime, and wine reduction. Add salt and pepper to taste
make the avocado

Slice the avocado lengthwise after peeling it, then season with salt, pepper, lime juice, and curry powder

Place the sliced, seasoned avocado on a piece of plastic wrap. Place mixed crab meat in the center of the stacked avocados, then securely roll them in plastic wrap. Cut it to the size you want.

The cucumbers should be peeled and chopped roughly. Bring to a boil The cucumber, soda water, and sugar in a pot. To ensure that all the tastes are present, add mint leaves and lemon, and then continue simmering for a few minutes. After that, keep it cold and strain it to get only the liquid

Add lecite emulsification powder (ratio: 1 g powder for 100 ml liquid) then use a hand blender to create foam
Assembly
